Paleo Cashew Vanilla Icing

A creamy, Paleo cashew icing rich in vanilla flavor. Use for cupcakes, cookies or spread on loaves.

Equipment

  • Blender (preferably high speed)

Ingredients
  

  • 1-½  cups raw cashews soaked 8 hours hours then drained & rinsed
  • 2 tbsp coconut oil
  • ¼ cup honey or maple syrup
  • 2 tbsp vanilla
  • 2 – 4 tbsp plant milk

Instructions
 

  • In a blender, combine the cashews, honey, vanilla, coconut oil, sea salt and 2 Tbs of plant milk.
  • Blend on high speed for at least one minute, stopping to to scrape the walls as needed.
  • If needed, add 1-2 Tbs more of plant milk, depending on desired consistency.
  • The icing is ready when it is smooth and shiny and has no visible cashew chunks.
