Paleo Cashew Vanilla Icing
A creamy, Paleo cashew icing rich in vanilla flavor. Use for cupcakes, cookies or spread on loaves.

- Blender (preferably high speed)
Ingredients
- 1-½ cups raw cashews soaked 8 hours hours then drained & rinsed
- 2 tbsp coconut oil
- ¼ cup honey or maple syrup
- 2 tbsp vanilla
- 2 – 4 tbsp plant milk
Instructions
- In a blender, combine the cashews, honey, vanilla, coconut oil, sea salt and 2 Tbs of plant milk.
- Blend on high speed for at least one minute, stopping to to scrape the walls as needed.
- If needed, add 1-2 Tbs more of plant milk, depending on desired consistency.
- The icing is ready when it is smooth and shiny and has no visible cashew chunks.
